Tofu Fajitas

Who else loves Fajitas? It’s one of the best lunch wraps to have. Super flavourful and can get you filled up quite quickly!

Before starting my Vegan Challenge earlier this year, I had never thought I would eat Tofu as one of the main ingredients in my meals. Certainly not to replace meat. I think the only times I had Tofu was when I ordered my favourite Asian dish, the Pad Thai. They would throw in a few pieces of chewy Tofu.

Now, I’m making delicious meals with Tofu as the main source of protein!

If you’re feeling like making a quick and fun meal for lunch, which barley needs prepping, this one is for you!

Check out the Video recipe at the bottom for a step-by-step mini tutorial.
