Tofu Fajitas

Who else loves Fajitas? It’s one of the best lunch wraps to have. Super flavourful and can get you filled up quite quickly!

Before starting my Vegan Challenge earlier this year, I had never thought I would eat Tofu as one of the main ingredients in my meals. Certainly not to replace meat. I think the only times I had Tofu was when I ordered my favourite Asian dish, the Pad Thai. They would throw in a few pieces of chewy Tofu.

Now, I’m making delicious meals with Tofu as the main source of protein!

Tofu Fajitas

  • Spice Mix
  • 1 Tbsp Taco Seasoning

  • 1 Tsp Nutritional Yeast

  • 1 Tsp Garlic Powder

  • 1/2 Tsp Salt

  • Plants
  • 1 Block Extra-firm Tofu
    Pressed and drained for 10 minutes

  • 1 Tbsp Freshly Minced Ginger

  • 1 Sliced Onion

  • 1 Sliced Green Pepper

  • 1 Sliced Red Pepper

  • The Rest
  • 2 Tbsp Peanut Oil

  • Dairy-free vanilla yogurt

  • Salsa

  • Avocado

  • Chia Seeds


  • Prepping
  • Press and drain the Tofu block under a bowl of heavy fruits for 10 minutes. Follow by cutting the Tofu into rectangular shapes.
  • In the meantime, cut up all the Veggies and set them aside.
  • Prepare the Spice Mix in a small bowl.
  • Heat 1 Tbsp of Oil in a pan over medium heat.
  • Cooking
  • Add the Ginger to the pan and cook for 1-2 minutes.
    Until fragrant
  • Add the Tofu pieces to the pan and cook for 5 minutes stirring frequently.
    Until each side starts to become golden
  • Add half of the Spice Mix to the pan – Stir again to coat all the pieces.
  • Add the Onion and Bell Peppers – Adding in the remaining Spice Mix.
  • Stir everything again to combine and cook for 5 to 7 more minutes.
  • Remove from heat and build up your Fajita wraps.
