with a citrusy tahini dressing
Vegan | Meatless
[𝐒𝐚𝐯𝐞 to make it later!]

This power bowl is loaded with over 𝟏𝟎 𝐝𝐢𝐟𝐟𝐞𝐫𝐞𝐧𝐭 𝐩𝐥𝐚𝐧𝐭𝐬!
Made of shredded tofu and air fried (or grilled) veggies, served over a bed of pearl couscous, and a side salad. Topped with avocados, and drizzled with a tangy tahini sauce.

Can you guess the secret ingredient in the sauce? 👀

Eid Mubarak to everyone celebrating! ☪️

I came across this quote from @drnourseblini ‘s post that I felt like sharing:

“The philosophy of Eid Al-Fitr is to continue on one's spiritual journey. We can now ponder over the strength of our will, which manifested itself during Ramadan.

If the holy month was observed properly, Eid becomes the day of freedom from the chains of bad habits (such as laziness, overeating , backbiting, lying,...) and the celebration of a
stronger character (more piety, discipline, and self-control)”

It resonates with me because I feel like while we all have bad habits (and probably will continue to have them), we also have the ability to change them. And it starts with awareness.

In a way - at least for me - once I realize that a bad habit is taking over (significantly affecting me), I tend to shift my focus to what good habits I can add to my life, and use it to replace the bad one.

I understand that some habits are much more difficult to get rid of/or build. I try to keep my energy for the simplest/smallest changes that I can do, and go on from there.

For example, I used to start my day with a big batch of Turkish coffee (no surprise there 😅). I enjoy it for the vibe around a peaceful 15-20 minutes before my day begins. I learned that I also have the same peaceful vibe while taking my morning walk. So that’s what I did today. And yes, I still had my morning coffee after ☕️

Here’s another way to make them!
Air fried Atayef (Middle Eastern Pancakes) 🥞
𝐒𝐰𝐢𝐩𝐞 👈🏼 for the recipe cards

Made with the same batter as the Asafiri version, but these are sealed all the way and cooked again after adding the filling.

They’re traditionally deep fried in oil. This healthier take on my vegan Atayef are air-fried to perfection 🤤

I used a half Ashta, half mozzarella filling for these. Turned out creamy and cheesy!

Swipe 👈🏼 for the recipes of the vegan Ashta and the simple syrup.

These Arabic Cabbage Rolls are aromatic, tender, and juicy. Made with a garlicky meatless meat filling. Easily one of my childhood favourites!

Its a bit of a long, yet simple process. But the end results are SO worth it 🤤
And you can tell it’s tasty just from the smell that covers up the entire kitchen!

A crowd-pleaser for sure!

It’s a hearty bowl with cozy flavours and the creamiest texture 😋
Made with under 10 ingredients, and ready in about 30 minutes. It’s also full of protein, thanks to the lentils!

This soup is one of my favourites. It makes a great meal on its own, or have it as a side to your main dish. I like to make a big batch during Ramadan as a soup prep, since it’s light yet filling for Suhour too.

I’m having it again today for Iftar with a plate of leftover Makloubeh!

Dipped in melted choco then cooled for a heavenly treat!

I first saw these over at Walla’s page (@walla_abueid), and I thought they would make a fun & fancy dessert.
And they were!

I simply crumbled a baked (and cooled) chocolate cake, then rolled into balls, and covered with a chocolate layer to cool in the fridge 😍

Definitely worth trying!

It doesn’t get better than that! 😍
It’s my ultimate comfort *breakfast* food.

It also makes a great Iftar for Ramadan! 🌙

Anyone else call it “The Ramadan Soup?”

We have this almost every other day during Ramadan. It’s a cozy starter for Iftar. I also enjoy a bowl for Suhour sometimes!

With Ramadan coming up, I like to prep a big batch of the vegan meatballs, and freeze for later. Then it’s only about 15 mins away from making this soup!

It’s one of the simplest soups I’ve ever made. I use tomato paste to make things easier. But feel free to chop up fresh tomatoes instead.

It’s a cozy one-pot stew, made in a rich & creamy tomato sauce, cooked with lots of garlic and saffron for a fragrant earthy flavour!

I find it’s so difficult to capture tasty-looking photos of soups & stews, especially when they’re so red!

So to make mine as appealing as possible, I did this👇🏼
(1) Garnished with parsley to offset the red hue with bits of green.
(2) Took close-up shots to show details and texture in the bowl.
(3) Kept the props to a minimum, to keep the focus on the stew.

One thing I’d maybe change:
The serving bowl…
A plain bowl would probably be better to avoid distractions from those patterns. Oh well!

Nothing says ‘I love you’ like a good bowl of
Ruz b Halib
(Syrian Rice Pudding 🌱 VEGAN)

I grew up eating this dessert a lot when my family had friends over. It was always a must-serve treat, especially during celebratory seasons (Ramadan/Eid).

It’s a creamy milky rice pudding, made with a hint of rose water, and topped with crushed pistachios.

Always made with love!

Which is why I always got excited when we had people come over 🤪

Make this for your loved ones, or tag your s/o to make it for you on V-Day! 💙

Here’s the recipe👇🏼
*makes 12 bowls*

Ingredients:
(1) 1 cup short grain rice, rinsed & soaked 15 mins
(2) 2 cups water
(3) 6 cups plant milk (I used oat milk for a creamier texture)
(4) 250 g firm tofu
(5) 3 tbsp cornstarch
(6) 1/2 cup water
(7) 3/4 cup sugar
(8) 1/4 tsp mastic, crushed (found at Middle Eastern stores)
(9) 1/8 cup rose water
(10) 1/2 cup crushed pistachios

Instructions:
(1) Add rice & water to a large pot. Bring to a boil over high heat.
(2) Once it bubbles, turn to low, cover, and cook for 12 to 15 minutes. The rice should be about 75% cooked. Most water should be absorbed.
(3) Blend half of the plant milk & tofu. Add it to the pot, along with remaining plant milk. Using a whisk, stir until all rice is separated.
(4) Whisk the cornstarch & water in a small bowl to make a slurry. Add it to the pot, along with the sugar & crushed mastic. Whisk until sugar is dissolved.
(5) Bring it to a boil over medium heat - continue whisking. Once it bubbles, turn the heat to low. Cook for 10 to 12 minutes, until thickened - whisking continuously.
(6) Once creamy, remove from heat, and whisk in the rose water.
(7) Empty into 12 small bowls. Refrigerate for at least 4 hours, or overnight.
(8) Garnish with crushed pistachios and serve.
*can be served hot or cold*
