I make smoothies a lot. Most are quick and plain, just to feed my body some nutrients. But sometimes I like to add a little touch of season into them. Like these Pumpkin Apple Smoothie Cups.
I have been experimenting with pumpkin this year more than before, and thought it was a must to try them in a smoothie – turned out great! They’re filled with fall-inspired ingredients. Crunchy bits of apples and cinnamon, with a some pecans. They make a great breakfast, or light dessert.

Pumpkin Apple Smoothie Cups

1/2 Cup Frozen Banana
1 Cup Frozen Mangos
1/4 Cup Pumpkin Purรฉe
1/2 Cup Diced Apples
1 Tbsp Sunflower Seeds
2 Tbsp Pecans
1/2 Tsp Ground Cinnamon
1/4 Tsp Ground Nutmeg
1/4 Tsp Ground Ginger
2 Tbsp Pineapple Mango Juice – optional
1/2 Cup Oat Milk
Directions
- Pulse/blend all the ingredients in a food processor/blender until the apples break down. Blend on low for a couple of minutes until thick and creamy.
- Slice an apple into thin circles, and then cut in half. Place on the sides of your cups, standing up. Then carefully pour the smoothie in the centre.
- Top off the cups with a pinch of cinnamon and a pecan. Gran a straw AND a spoon and dig in!
