These bright and lemony potatoes are almost always on my list when I go to a pot lock! They’re flavourful, herby, and most importantly, they’re a super easy dish to prepare. They make a great addition to any potluck table.
The best part?
It only takes less than 5 steps, and about 30 minutes to get them ready!

Lemon Pepper Potatoes
3 Large Potatoes
1 Tbsp Neutral Oil
1 Tbsp Vegan Butter
Garnish (green onion/parsley/chives/cilantro)
2 Tbsp Lemon Pepper Seasoning
1/2 Tsp Turmeric
Pinch of Paprika
Salt & Pepper to taste
- Peel the potatoes, wash and rinse, then pat dry.
- Cut into 1/4 inch slices and boil in a large pot. Once it begins boiling, cook for about 10 mins – until potatoes have softened. Drain from water and rinse slightly with cold water.
- Heat oil in a pan/skillet. Add the potatoes and stir around to coat. Add the butter and spices. Stir and squeeze the lemon over the potatoes.
- Stir again and cook for 5-7 minutes – until they’re fully cooked, and crisped up. Remove from heat and garnish.
