Here’s a summer bowl you need to try 𝐒𝐰𝐢𝐩𝐞 👈🏼 to see how I built it _________ 🌱 𝐒𝐡𝐫𝐞𝐝𝐝𝐞𝐝 𝐓𝐨𝐟𝐮 & 𝐏𝐞𝐚𝐫𝐥 𝐂𝐨𝐮𝐬𝐜𝐨𝐮𝐬 with a citrusy tahini dressing Vegan | Meatless [𝐒𝐚𝐯𝐞 to make it later!] This power bowl is loaded with over 𝟏𝟎 𝐝𝐢𝐟𝐟𝐞𝐫𝐞𝐧𝐭 𝐩𝐥𝐚𝐧𝐭𝐬! Made of shredded tofu and air fried (or grilled) veggies, served over a bed of pearl couscous, and a side salad. Topped with avocados, and drizzled with a tangy tahini sauce. Eid Mubarak to everyone celebrating! ☪️ I came across this quote from @drnourseblini ‘s post that I felt like sharing: “The philosophy of Eid Al-Fitr is to continue on one's spiritual journey. We can now ponder over the strength of our will, which manifested itself during Ramadan. If the holy month was observed properly, Eid becomes the day of freedom from the chains of bad habits (such as laziness, overeating , backbiting, lying,...) and the celebration of a stronger character (more piety, discipline, and self-control)” It resonates with me because I feel like while we all have bad habits (and probably will continue to have them), we also have the ability to change them. And it starts with awareness. In a way - at least for me - once I realize that a bad habit is taking over (significantly affecting me), I tend to shift my focus to what good habits I can add to my life, and use it to replace the bad one. I understand that some habits are much more difficult to get rid of/or build. I try to keep my energy for the simplest/smallest changes that I can do, and go on from there. For example, I used to start my day with a big batch of Turkish coffee (no surprise there 😅). I enjoy it for the vibe around a peaceful 15-20 minutes before my day begins. I learned that I also have the same peaceful vibe while taking my morning walk. So that’s what I did today. Here’s another way to make them! Air fried Atayef (Middle Eastern Pancakes) 🥞 𝐒𝐰𝐢𝐩𝐞 👈🏼 for the recipe cards ______________ Made with the same batter as the Asafiri version, but these are sealed all the way and cooked again after adding the filling. They’re traditionally deep fried in oil. This healthier take on my vegan Atayef are air-fried to perfection 🤤 I used a half Ashta, half mozzarella filling for these. Turned out creamy and cheesy! Made with a garlicky meatless meat filling. Easily one of my childhood favourites! Its a bit of a long, yet simple process. But the end results are SO worth it 🤤 And you can tell it’s tasty just from the smell that covers up the entire kitchen! It’s also full of protein, thanks to the lentils! This soup is one of my favourites. It makes a great meal on its own, or have it as a side to your main dish. I like to make a big batch during Ramadan as a soup prep, since it’s light yet filling for Suhour too.
